Chicken Wellness Soup
2 tbsp olive oil
1 brown onion, diced
3 garlic cloves, minced
2 cups diced chicken
2 carrots, diced
2 celery sticks, diced
1 tsp turmeric powder
1 tsp ground cumin powder
1/2 tsp ginger powder
1 tbsp apple cider vinegar
1.5 litres water
500ml chicken broth or stock
In a large pot, heat olive oil over medium heat, and sweat the chopped onions and garlic in oil until fragrant and translucent.
Add carrots, celery and spices and cook for a further 5 minutes, stirring occasionally.
Add herbs, seasonings, vinegar, chicken, water, broth or stock and cook on medium for about 10 minutes, or until other vegetables have softened.
For a heartier version, add whole wheat pasta or couscous.
