Broccoli Nuggets
2 broccoli heads
1 egg or chia egg (1 tbsp chia seeds: 3 tbsp water)
1/2 cup nutritional yeast or 1 cup of cheddar cheese
1/3 cup bread crumbs (GF bread crumbs works too)
1 1/2 tsp onion powder
1 tbsp olive oil
salt and pepper, to taste
Preheat oven to 175c.
Combine ingredients for the chia egg and set aside until a gel forms. You could also do this with ground flaxseed if that’s what you have on hand.
Wash, pat dry and roughly chop your broccoli. Place the broccoli in a food processor, and pulse a few times.
Add the rest of the ingredients into the processor and blend until well combined – no chunks of broccoli! An almost dough-like consistency will form.
On a lined baking tray create nugget shapes and place them on the baking sheet.
Once your mixture is used up, bake the nuggets for 15 minutes. FLIP THEM! Then bake for another 15.
Remove nuggets from the oven, dip in your fave sauce, and enjoy!
