Sweet Curry Carrots
2 tbs virgin coconut oil
10 carrots
Pinch of salt to taste
1 tsp sweet curry powder
1/2 tsp garam masala
1/4 tsp ground cumin
1/4 tsp ground ginger
2 tbs coriander or flat-leaf parsley, finely chopped
Preheat oven to 200c. Cover a baking tray with foil, and spray with a light layer of neutral flavoured cooking spray.
Place coconut oil in an oven-safe vessel, and allow the oil to melt in the oven while prepping carrots.
Peel carrots, then cut into chunks. Transfer to a large-ish bowl, then add salt, curry, garam masala, cumin, ginger, and melted coconut oil, then toss to coat.
Arrange carrots on baking sheet, then bake for 30 minutes, stirring once halfway through (about 15 minutes). Transfer to serving dish and sprinkle with coriander or parsley to taste.
Serve warm or at room temperature.
