Pancake Tray Bake
Cinnamon Sugar Topping
1 Tbsp. granulated sugar
1/2 tsp. ground cinnamon
Pancake
2 cups buttermilk*
2 large eggs, beaten
2 Tbsp olive oil
2 cups all-purpose flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 cups of chopped fruit or berries
*Cheat's Buttermilk = 2 cups of milk with 2 tsp lemon juice
In a small bowl, combine sugar and cinnamon with your fingertips. Set aside.
Pre-heat oven to 200 degrees. Spray a baking tray with nonstick cooking spray. Set aside.
In a medium bowl, whisk buttermilk, eggs and two tablespoons of olive oil.
In a large bowl, whisk together flour, baking powder, baking soda and salt. Add the buttermilk mixture. Stir until just combined. There should still be lumps. Gently fold in the fruit, or if you want you can pour the batter into the baking tray, then divide the fruit up into sections like this. Top with the cinnamon sugar.
Bake until golden brown and puffy, about 11-12 minutes. The pancake should feel springy in the middle.
