Cheese Crackers
30g unsalted butter at room temp
85g cheddar cheese
30g parmesan cheese
1/2 tsp smoked paprika
1/4 tsp salt
1/2 cup plain flour
1 tbsp cold water
In a medium bowl, mix the butter, cheese and spices together with a spatula till you have a cheesy butter spread.
Add the flour. Mix with a fork to break up the butter clumps until you have a pebble consistency. Finally, add the cold water and bring it together into a dough.
Flour a board and roll the dough out to 1/2 cm thick. Cut into squares and poke a couple of holes into each square to stop the cracker from puffing up.
Bake in a 150 degree celsius oven for 15 to 20 mins or until golden.
