Can't Think Pasta
500g pasta
1 – 2 broccoli heads
Unsalted butter
Olive oil
2 garlic cloves
1 tbs fresh or dried herbs
1 lemon, zested
100g feta or grated cheese
Boil up a big pot of salted water and whack in your preferred pasta.
Chop the washed broccoli into tiny pieces (peel the stem and chop this up too). Place broccoli pieces in a large frying pan, with a big knob of butter, a glug of olive oil, a few tablespoons of water, crushed garlic cloves (to taste) and herbs.
Cover with a lid and cook on low heat for the entire duration of the pasta, around 10 minutes. Stir tender broccoli pieces through cooked and drained pasta. Season to taste. Add a squeeze of lemon, tablespoon of olive oil and some grated cheese to the child portion. For the adult servings, add chilli, lemon zest and feta.
